Delicious Berry Muffins
These delicious Wheat & Gluten free muffins are so simple and easy to make. Perfect for afternoon tea or as a weekend picnic. Enjoy!

Ingredients You’ll Need
- 1 ½ cups Healtheries Simple Baking Mix
- 2 tsp baking powder*
- ½ cup sugar
- ¾ cup fresh or frozen berries
- ½ cup reduced fat milk
- 2 Tbsp vegetable oil
- 1 egg
- ½ tsp vanilla essence
* to ensure this recipe is completely gluten free ensure you use Gluten Free Baking powder
Getting Into It
First Step
Preheat your oven to 200*C and grease 8 medium muffin tins
Second Step
Combine Simple Baking Mix, baking powder and sugar in a large bowl. Add berries and toss lightly to coat with the dry mixture.
Third Step
In another bowl add milk, oil, egg, vanilla essence and whisk together.
Fourth Step
Pour liquid ingredients over dry ingredients and mix lightly until all the ingredients are just combined.
Fifth Step
Spoon your mixture into the prepared muffin tins and bake for about 20-25 minutes. Stand muffins for 5 minutes before removing from tins
Serving Suggestions
Serve with a dollop of reduced fat plain yoghurt.
