Pikelets 1 cup Healtheries Simple Baking Mix
1/2 tsp baking powder
1/2 cup milk
2 - 3 Tbsp sugar
1 egg
2 Tbsp butter, melted
Place the baking mix, sugar and baking powder in a bowl. Make a well in the centre of the dry ingredients. Combine egg, milk and butter in another bowl then stir into the dry ingredients. Lightly grease a non-stick frying pan with butter then place spoonfuls of the batter into the pan. Turn with a spatula when small bubbles appear in the surface and the underside is golden brown. Cook until both sides are golden brown.
