Wheat and Gluten Free Bread
RECIPES INCLUDE:

One White Loaf, Dense Texture – Breadmaker
One White Loaf, Light Texture – Breadmaker
One White Loaf with Egg – Breadmaker
One White Loaf with Milk Powder – Breadmaker

ONE WHITE LOAF (DENSE TEXTURE) - BREADMAKER

Ingredients:
420 mls water (room temperature cold water) (400 – 450mls may be required for optimum results)
11/2 tsps or 5 gms wheat & gluten free instant dried yeast
500 gms (3 ½ cups) Healtheries Simple Bread Mix
50 mls or 3 Tbsp vegetable oil
Directions:
1. Add the water and yeast into the bread maker pan and allow 5 minutes for the yeast to disintegrate.
2. Add the Healtheries Simple Bread Mix and oil, and load the bread pan into the bread maker. (NB. Premixing of all ingredients in a bowl to a smooth consistency may be required for certain bread makers)
3. Select a 3 hour medium loaf baking cycle – ‘whole-wheat setting’, and start the bread maker. Basic Rapid mode may be used if available but may not produce as good a product. Other types of Breadmakers may require a shorter cycle (2 – 2.5 hrs).
4. Once baked, remove loaf promptly from bread pan.
5. Allow to cool on a wire rack for 10 – 15 minutes before cutting. This loaf recipe gives a slightly denser texture but makes it ideal for spreading toppings.
6. Bread may be sliced & eaten fresh, or frozen for toast or later use.

ONE WHITE LOAF (LIGHT TEXTURE) - BREADMAKER

Ingredients:
430 mls cold water (room temperature)
3 tsps or 10 gms wheat & gluten free instant dried active yeast
500 gms Healtheries Simple Wheat & Gluten Free Bread Mix
50 mls or 3 Tbsps vegetable oil

Directions:
1. Place the yeast into the breadmaker pan first, then the Healtheries Simple Bread Mix, followed lastly by the wet ingredients.
2. Yeast responds well to protein, and by adding milk powder or cheese to the mixture the loaf will raise more.
Place the bread pan into the breadmaker baking chamber.
3. Set the Breadmaker to the Basic Bake Rapid Mode (size XL, crust dark or medium) and start the bread maker. Rapid Bake eliminates the second rising which is not required for gluten free breads.
4. Gluten Free flour is a lot finer than normal flour and it is recommended that you assist the mixing process 5 to 10 minutes into the cycle once the kneading process has begun. Lift the lid (do not turn the breadmaker off), and with a spatula carefully scrape down the sides ensuring care is taken with the mixing blade. The dough should be the consistency of a thick cake mix.
5. You may need to add 20 – 30 mls of water at this point.
6. Once the cycle has finished and the bread is baked, remove the loaf immediately from bread pan.
7. Allow to cool on a wire rack before cutting.
8. This recipe gives a lighter texture, but it is not so suitable for toppings.


ONE WHITE LOAF PLUS EGG - BREADMAKER

Ingredients:
1 whole egg (or 1 egg white)
Approx. 420ml water
1 ½ tsp (5g) active dry yeast
500g (3 ½ cups) Healtheries Simple Bread Mix
50ml vegetable oil

Directions:
1. To a measuring jug add one whole egg or one egg white and fill with water to 420ml mark. Transfer to the bread maker pan.
2. To this liquid add the yeast, Healtheries Simple Bread Mix and oil and load the bread pan into the bread maker baking chamber. Select a 3 hour medium loaf baking cycle – ‘whole-wheat setting’ and start the bread maker. Basic Rapid mode may be used if available but does not produce as good a product. Other types of Breadmakers may require a shorter cycle (2 – 2.5 hrs).
3. Once baked, remove loaf promptly from bread pan and allow to cool on a wire rack before cutting.

ONE WHITE LOAF PLUS MILK POWDER - BREADMAKER

Ingredients:
480ml cold water
1 ½ tsp (5g) active dry yeast
500g Healtheries Simple Bread Mix
1 ½ cups milk powder (skim or whole)
50ml vegetable oil

Directions:
1. Add water and yeast into bread maker pan.
2. In a bowl mix the Healtheries Simple Bread Mix and milk powder and add to the bread pan.
3. Add the oil and load the bread pan into the bread maker baking chamber.
Select a 3 hour medium loaf baking cycle – ‘whole-wheat setting’ and start the bread maker. Basic Rapid mode may be used if available but does not produce as good a product. Other Breadmakers may require a shorter cycle (2 – 2.5 hrs).
4. Once baked, remove loaf promptly from bread pan and allow to cool on a wire rack before cutting.
