Apricot & Coconut Muesli Cookies

These cookies are great to have stored away to add to lunch boxes or as a yummy home made treat. You’ll also be pleased to know that this is a Gluten and Wheat free recipe and so just so quick and easy to make. Home baking couldn’t be easier!

  • 3 cups Healtheries Simple Hi-Fibre Muesli Apricot & Coconut
  • 1 cup Healtheries Rice Flour
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon baking soda
  • 125g butter, softened
  • 1 cup packed brown sugar
  • 1 egg

Method

  1. Preheat oven to 180°C or160°C fan-forced. Lightly grease 2 baking trays and line with baking paper.
  2. Combine the muesli, flour, cinnamon and soda and set aside.
  3. Beat butter and sugar in a bowl until creamy. Add egg and beat well.
  4. Mix in dry ingredients.
  5. Roll tablespoonfuls into balls; place on trays, allowing room to spread.
  6. Bake 15 minutes or until edges are done, but centres soft. Transfer to cooling rack.

Serving Suggestions

Serve for afternoon tea or pop into the lunchbox for a tasty snack
