Apricot Muesli Slice

This delicious and crunchy muesli slice is gluten free and bursts with succulent dried apricots perfect for a healthy snack. Plus it is quick and easy to make!

Base

  • 1 cup Healtheries Simple Hi-Fibre Muesli
  • 1 cup Healtheries Rice Flour
  • 1/4 cup honey
  • 80g low fat spread or butter
  • 2 eggs

Topping

  • 1 cup Healtheries Simple Hi-Fibre Muesli
  • 50g low fat spread or butter, softened
  • 1/4 cup honey
  • 1 egg
  • 1 cup chopped dried apricots

Variation

Substituting the dried apricots with chopped dried apples and pears or coconut flakes would also work well as a topping.

Method

  1. Preheat oven to 180°C
  2. Place muesli, flour, honey, butter and eggs into a food processor. Process until well combined.
  3. Press into a greased or lined 18 x 28cm lamington tin.
  4. Combine topping ingredients in a bowl and mix well. Spoon mixture evenly over the base. Press down well with the back of a spoon to prevent topping browning too quickly.
  5. Bake for 20 minutes or until firm.
  6. Allow to cool before cutting into pieces. Store in an airtight container.

Serving Suggestions

Serve as a morning or afternoon snack or pop into the lunchbox in place of a bought muesli bar.
