Baked Polenta Fries

These flavoursome morsels are sure to impress with their creamy centre and crunchy, crisp outside. This healthier for you option takes inspiration from traditional South American recipes, offering a new and exciting sensory delight.

  • 4 cups reduced fat milk
  • 1 cup water
  • 2 tablespoons olive oil
  • 2 cups Healtheries Ground Cornmeal
  • ¼ cup Healtheries Gluten Free Baking Mix
  • 1/2 cup finely grated parmesan cheese
  • 2 teaspoons salt + pepper to taste
  • 2 tablespoons olive oil or olive oil spray

Method

  1. Line a large baking tray with baking paper and lightly spray with olive oil.
  2. In a large saucepan, combine the milk, water, olive oil and bring to heat until near boiling.
  3. Whisk in the baking mix, combining throughout the liquid mixture.
  4. Gradually whisk in the ground cornmeal until combined. Reduce heat to low and cook, stirring until mixture begins to pull away from the sides.
  5. Stir in the parmesan cheese, salt and pepper and remove from heat.
  6. Transfer the mixture into your prepared baking tray and cover with wrap. Smooth the surface of the mixture as much as possible. Place in the fridge for at least one hour, or overnight if preparing ahead of time.
  7. When cooled and firm, cut the mixture into 2cm wide strips and divide lengthways 4cm apart.
  8. Pre-heat oven to 220 degrees C. Line a second baking tray with baking paper and lightly spray with olive oil.
  9. Transfer half of the fries to the second baking tray and space out the remaining fries on the first tray. Lightly spray the top side of the fries with olive oil spray and bake for 30 minutes, flipping fries after 15 minutes.
  10. Reduce temperature to 180 degrees C and lightly grill each side of the fries until golden.

Serving Suggestions

Great as an appetiser served with dipping sauce or lightly drizzled with lime juice
