Banana Chia Pikelets

Pikelets are great for a weekend breakfast or lunchbox snack. This recipe uses banana and chia seeds for a healthy and tasty twist on a family favourite.

  • 2eggs
  • 1 1/4 cups flour or Healtheries Gluten Free Baking Mix
  • 2 tsp baking powder
  • 2 Tbsp Healtheries Black Chia Seeds
  • 1/2 banana, mashed
  • 1 1/2 cups of reduced fat milk

*For a gluten free recipe,use the Healtheries Gluten Free Baking Mix and ensure all ingredients are gluten free.

Makes

makes about 16 pikelets

Method

  1. Beat eggs and stir in the sifted flour and baking powder.
  2. Mix in mashed banana and chia seeds.
  3. Stir in milk, until all ingredients are just combined.
  4. Spoon the batter into a hot pan, until bubbles appear, and turn over.
  5. Keep the pancakes warm while using up the remaining batter.
