Banana, Walnut, Coconut & Chia Muffins

We love using ground chia seeds as a nutritious egg alternative in baking. These flavoursome muffins are simple to make and packed with nutritious ingredients for a naturally sweet treat.

  • 1 Tbsp Healtheries Ground Chia Seeds
  • 3 Tbsp water
  • 1/2 cup canola oil
  • 1/4 cup caster sugar
  • 2 bananas, peeled
  • 2 Tbsp honey
  • 1/2 cup dessicated coconut
  • 1 cup flour or Healtheries Gluten Free Baking Mix
  • 1 tsp baking powder 
  • 1/4 cup low fat milk
  • 1/2 cup walnut, roughly chopped

*For a gluten free muffin, ensure all ingredients are gluten free

Getting Into It

  1. Preheat oven to 1600C. Line 12 muffin tins.
  2. Soak chia seeds in water.
  3. Combine oil, caster sugar and chia seeds in a large bowl.
  4. Mash banana with honey and add to mix, along with the coconut.
  5. Add flour and baking powder to the mix.
  6. Mix through the milk, followed by the crushed walnuts.
  7. Transfer mixture evenly into 12 lined muffin trays.
  8. Bake on 160 degrees C for 30 minutes.

Serving Suggestions

Remove from oven and sprinkle extra crushed walnuts over muffins while warm and serve, or enjoy once cooled as an afternoon treat.
