Bircher Fruit Tartlets

These tasty wee morsels will be devoured in an instant!  This tartlet recipe has a healthy twist with added fibre from bircher muesli and dried fruits while being low fat and low sugar.

Pastry

  • 1 cup plain flour
  • 60g butter or fat reduced spread 
  • 1 cup Healtheries Bircher Muesli
  • 2 to 3 tablespoons orange juice

Custard

  • 1 cup milk
  • 2 tablespoons honey
  • 1 tablespoon custard powder

Topping

  • 200g mixed dried fruit
  • 2 tablespoons Healtheries Dietex Apricot Preserve (optional)

Method

  1. Preheat oven to 200°C.
  2. Prepare pastry:  Combine flour and butter (or low fat spread) in a food processor until fine breadcrumbs.  Add muesli and sufficient orange juice to make a soft dough.
  3. Roll pastry out on a lightly-floured board until about 3mm thick. Using a scone cutter cut out circles and ease into greased patty tins.
  4. Prick the base of each pastry case with a fork. Rest in the fridge for 15 minutes.
  5. Bake in hot oven (200°C) for 20 minutes or until golden. Remove from tin. Allow to cool.
  6. Prepare custard: Combine milk, honey and custard powder in a small saucepan until smooth.
  7. Bring to the boil, stirring constantly, until thickened. Simmer for 3 minutes. Remove from heat and cover with plastic wrap. When cool, spoon into pastry cases.
  8. Prepare topping: Sprinkle tartlets with dried fruit medley. Heat jam. Spoon or brush a little over each tartlet. Store in an airtight container.

Note: Toppings such as fresh fruit can also be used.
