Bircher Pancakes

Pancakes are always a family favourite, and this easy healthy recipe transforms them into a nutritious and delicious low fat breakfast or dessert!  It is also suitable for people with diabetes.

  • 2 cups fat reduced milk
  • 3 eggs
  • 1/4 cup caster sugar
  • 1 cup plain flour*
  • 1 cup Healtheries Bircher Muesli
  • 60g low fat spread
  • 250g fresh berries (e.g. strawberries, blueberries and raspberries), to serve
  • 1/2 cup maple syrup, to serve*

Variation

Replace ½ of the plain flour with Healtheries Stoneground Wholemeal Flour. For people with diabetes, limit or substitute your maple syrup for lemon juice or low sugar jam.

Makes

6 serves - makes about 30 mini pancakes

Method

  1. In a bowl, whisk together the milk, eggs and sugar.
  2. Add the flour and whisk until no lumps remain. Stir in the muesli, mixing well to combine.
  3. Heat a small frying pan over medium heat. Add a little low fat spread.
  4. Spoon 2 tablespoons of the mixture into the pan. Once small bubbles appear on the surface, flip over and cook until golden on both sides.
  5. Keep the pancakes warm while using up the remaining batter.

Serving Suggestions

Top these pancakes with berries and maple syrup.  For a low sugar alternative you could substitute the maple syrup for a dollop of low fat Greek yoghurt or lemon juice.
