Carrot & Almond Loaf

This gluten-free loaf is absolutely delicious! It’s most and full of flavour and makes a perfect treat any time of day.

  • 1 ½ cups of Healtheries Gluten Free Baking Mix
  • ½ cup of Healtheries Fine Ground Cornmeal
  • 2 teaspoons ground cinnamon
  • 1 teaspoon baking soda
  • 2 teaspoons of gluten-free baking powder
  • 1 teaspoon guar gum
  • 1 cup Brown sugar
  • ¾ cup almonds, roughly chopped
  • 2 small carrots, grated
  • ½ cup rice bran oil
  • 3 eggs, lightly beaten
  • ½ cup low-fat milk

Method

  1. Grease a loaf tin and line with baking paper. Preheat the oven to 170ºC.
  2. Sift the flours, cinnamon, baking soda, baking powder and guar gum into a large bowl and combine really well with a whisk.
  3. Add the brown sugar and chopped almonds and stir to combine.
  4. Add the grated carrot, rice bran oil, eggs and milk and mix well.
  5. Pour the mixture into the lined loaf tin and smooth the surface with the back of a spoon.
  6. Bake in pre-heated oven for about 60 minutes or until golden and cooked. If the loaf starts to get too brown during cooking, cover with foil.
  7. Remove from oven and cool in the loaf tin before turning out onto a wire rack to cool completely. 
    TIP! To test if the loaf is cooked, insert a skewer into the centre of the loaf and if it comes out clean the loaf is ready. 

Serving Suggestions

Delicious on its own or with a thin spread of softened butter.
