Chia, Cashew & Date Muesli Bars

Make your own home-made muesli bars with this tasty recipe. Dates and chia seeds are great to help bind this mixture together, reducing the need for oil and extra syrups.

 

  • 3 Tbsp Healtheries Black Chia Seeds 
  • 1 cup pitted dates
  • 1/2 cup raw unsalted cashew nuts
  • 2 cups rolled oats
  • 1/2 cup dessicated coconut
  • 1 1/2 tsp ground cinnamon 
  • 1 tsp vanilla essence
  • 1 Tbsp Healtheries Almond Oil

Method

  1. Preheat oven to 120°C, line a tray with baking paper.
  2. Soak Chia seeds in 9 Tbsp of water. In a separate bowl, soak dates in hot water.
  3. Add cashews to a food processor and lightly pulse - add to a bowl, along with the oats, coconut, and cinnamon.
  4. Drain dates and mix in the food processor to a paste.
  5. Add chia seeds, date paste, vanilla essence and almond oil to the dry mix and combine.
  6. Firmly press the mixture into the baking tray, ensuring it is well formed.
  7. Bake for 5-10 minutes.
  8. Allow to cool and cut into 12 bars.

Serving Suggestions

Serve as a morning or afternoon snack or pop into the lunchbox in place of a bought muesli bar. For a smaller snack, cut the mixture into 16 bars.
