Corn & Chia Fritters

This traditional corn fritter recipe show you how easy it is to include chia seeds in baking and meals for an extra boost of nutrition.

  • 1 can of creamed corn
  • 2 spring onions, diced finely 
  • 1/2 red capsicum, diced finely 
  • 2 Tbsp Healtheries White Chia Seeds
  • 1/3 cup of wholemeal flour or Healtheries Baking Mix 
  • 1 tsp of baking powder
  • 1 egg
  • A pinch of pepper

*To make this recipe gluten free, use the Healtheries Baking Mix and a gluten free creamed corn.

9 Fritters

Method

  1. Place all fritter ingredients in a bowl and mix well to combine.
  2. Pour spoonfuls of the mixture into a heated non-stick fry-pan.
  3. Flip when bubbles appear - 2-3 minutes per side.

Serving Suggestions

Serve with a green salad for lunch or dinner, or with some steamed spinach at breakfast time.
