Dukkah Crusted Salmon

Dukkah makes a superb crust for salmon or firm white fish. It adds great flavour and a crunchy texture! Thank you to Carolie de Koster for providing this nutritous recipe.

Dukkah

  • 2 Tbsp (30 ml) ground coriander
  • 2 Tbsp (30 ml)ground cumin
  • 1 tsp (5 ml) cinnamon
  • 1 tsp (5 ml) salt
  • ½ tsp (2.5 ml) black pepper
  • ¼ tsp (1 ml) paprika
  • good pinch chilli powder or cayenne pepper
  • 1 cup (250 ml) Healtheries GROUND LSA – SUPER FRUITS

Dukkah Crusted Salmon

  • ± 1 kg pink salmon or firm white fish
  • few drops lemon juice (optional)
  • salt to sprinkle
  • ± 15 ml olive oil or melted butter to brush the tops
  •  ½ cup (125 ml) dukkah (see recipe above

Method

  1. Place all of the spice ingredients (not the LSA) into a non-stick pan and dry-fry while stirring for about 3 minutes or until a good flavour develops from the spices.
  2. Add the LSA and dry-fry one minute more while stirring to mix and toast very lightly. Once cooled, store in an airtight container in the fridge to use as required.

Dukkah Crusted Salmon

  1. Pre-heat the oven to 200 ºC. If using white fish, grease an oven baking dish lightly with oil – no greasing needed for salmon. Cut the fish into neat portions and if salmon is used, remove the fine bones carefully with a pair of tweezers. Sprinkle the portions very lightly with lemon juice if using and salt.
  2. Place the fish portions into the dish, brush very lightly with oil or butter and sprinkle an even layer of the dukkah over the top.
  3. Place the fish into the hot oven and bake until cooked to your liking (about 15 - 20 minutes). Baking time should be adjusted according to the kind of fish used and the thickness of the portions.
  4. Once cooked to your liking, remove from the oven, serve and enjoy.

Serving Suggestions

Serve with steamed vegetables and roasted potatoes, pumpkin or kumara. You can substitute the LSA Super Fruits for Ground LSA or LSA Super Grains if you prefer.
