Festive Cranberry & Chocolate Bliss Balls

Festive Cranberry & Chocolate Bliss Balls

Ingredients

  • ½ cup dried pitted dates*
  •  ½ cup cranberries*
  • 2 Tbsp Healtheries White or Black Chia Seeds
  • ½ cup cashew nuts
  • ¼ cup coconut
  • ¼ cup pumpkin seeds
  • 2 Tbsp cocoa powder*
  • 2 Tbsp soaking water from the dates and cranberries
  • 2 Tbsp melted coconut oil
  • 50g Healtheries 99% Sugar Free Dark Chocolate Baking Bits
  •  Desiccated coconut, Freeze-dried raspberry powder* or Cocoa powder* to roll the balls in.

*For a GF recipe please ensure these ingredients are Gluten Free.

Method

1.       Soak the dates and cranberries in recently boiled water for 10 minutes and then squeeze out thoroughly reserving the soaking water.

2.       Place the squeezed fruit and all of the remaining ingredients into a food processor and blend until well combined and the mixture stays together when rolled between your fingers.

3.       Using a tablespoon, roll into balls and then coat in either coconut, freeze-dried raspberries or cocoa.

4.       Store in an air-tight container in the fridge for up to one week.

Approximately 20 balls.
