Gluten Free Pikelets

Pikelets are such a quick and easy snack and taste delicious hot off the pan with a dollop of jam. Try this gluten free recipe which is also low fat.

  • 1 cup Healtheries Gluten Free Baking Mix
  • 1/2 tsp gluten free baking powder
  • 1/2 cup reduced fat milk
  • 2 - 3 Tbsp sugar
  • 1 egg
  • 2 Tbsp low fat spread, melted

Method

  1. Place the gluten free baking mix, sugar and baking powder in a bowl. Make a well in the centre of the dry ingredients.
  2. Combine egg, milk and butter in another bowl then stir into the dry ingredients.
  3. Lightly grease a non-stick frying pan with oil or oil-spray then place spoonfuls of the batter into the pan.
  4. Turn with a spatula when small bubbles appear in the surface and the underside is golden brown.
  5. Cook until both sides are golden brown.
