Gluten Free Spinach & Feta Savoury

Craving a savoury treat or wish to add variety to your gluten free diet? This recipe is great to use when a gluten free substitute for a savoury pastry is called for.

  • 270g Healtheries Gluten Free Baking Mix
  • 100g of Margarine
  • 1 Egg
  • 2 Tbsp. Water
  • 150g of Reduced Fat Feta
  • 3 Cups of Chopped or Baby Spinach

Method

  1. Add the margarine and baking mix to bowl, using your hands to crumble the ingredients together until the mixutre looks like coarse breadcrumbs.
  2. Add the egg and water and stir until the mixture is able to be formed into a ball. You may need to add more water if the mixture is very crumbly.
  3. Pre-heat your oven to 180 degrees C. Roll out the pastry into a rectangular shape on a large piece of cling wrap.
  4. Add the spinach and feta lengthways down the centre of the pastry.
  5. Using the cling wrap, fold the pastry over so each side meets in the centre. Lightly smooth the join using the cling wrap.
  6. Un-do the cling wrap as you roll the savoury onto a baking dish lined with baking paper. Bake for 10 minutes each side or until the pastry is cooked through.

Serving Suggestions

Enjoy a green salad on the side or simply wrap and pop in the lunchbox for the kids to enjoy. It's also great cut into smaller bite sized pieces for kids parties as an alternative to sausage rolls.
