Mini Cheese Puffs

Great tasting mini cheese puffs that are gluten free and perfect for an afternoon snack or picnic treat.

  • 1 cup water
  • 100 g fat reduced spread or butter
  • 1½ cups Healtheries Gluten Free Baking Mix
  • 3 eggs
  • 1 cup grated cheese
  • 2 tablespoons chopped herbs e.g. parsley, thyme, chives

Method

  1. Preheat oven to 200C. Lightly spray or brush 24 mini muffin tins with oil.
  2. Place the water and spread in a saucepan and heat until just boiling.
  3. Add the baking mix and stir quickly to combine.
  4. Add an egg, beat until combined, repeat twice
  5. Add the cheese and herbs
  6. Spoon into the muffin pans. Cook for 8 – 10 minutes until cooked and golden brown.

Serving Suggestions

Great to pack for a picnic or serve for afternoon tea warm from the oven
