Mini Filo Apple Rolls

Certainly one of the best healthy apple pie creations – quick to make with Fillo pastry. Serve as dessert or elegant coffee time treats. Thank you to Carolie de Koster for providing this scrumptious recipe.

Pastry

  • 7 sheets of Fillo pastry
  • ¼ cup (60 ml) melted butter

Sugar and Spice Filling

  • ½ cup (125 ml) Healtheries Ground LSA Super Fruits
  • ½ cup (125 ml) coarsely chopped walnuts or pecan nuts (optional but good)
  • ½ cup (125 ml) sugar
  • 1 tsp (5 ml) ground cinnamon
  • ¼ tsp (1 ml) mixed spice or cloves

Apple Filling

  • 1 x 800 g tin sliced pie apples
  • 2 Tbsp (30 ml) honey or sugar

To Garnish

  • Icing sugar to dust the baked roll

Method

  1. Preheat the oven to 170 ºC.
    Combine the Ground LSA Superfruits, nuts if used, sugar and spices.
    Stack the 7 sheets of fillo pastry, fold in half, press down onto the fold line, unfold and cut through the fold line to make 14 strips. Lay out and brush half of the strips with melted butter, sprinkle with the nut mixture and cover with a second pastry strip.
  2. For the apple filling, using a small knife to cut up and chop the apples coarsely in the tin. Add and mix in the sugar or honey.
  3. Divide the apple filling between the 7 stacked strips, allowing about 2 cm on the sides uncovered. Fold the sides over the filling to seal in the filling and roll up. Repeat until all the rolls are made.
  4. Brush a baking tray with melted butter and place the rolls onto the baking tray. Brush the top of the rolls as well and bake about 20 minutes until golden and crisp. Dust generously with icing sugar and serve while warm or allow to cool.

Serving Suggestions

Serve hot with whipped cream or low fat plain yoghurt.
