Poached Fruit in Green Tea

Enjoy a guilt-free dessert and indulge a bounty of fresh fruit poached in antioxidant-rich green tea. Perfect adorned with creamy, sweet crème fraîche or mascarpone cheese.

Recipe 1:

Tea
Green Tea with Orchard Peach

Fruit
4 medium peaches, peeled & diced
400g strawberries, hulled and cut in half

Recipe 2:

Tea
Green Tea with Braeburn Apple

Fruit
2 medium Braeburn apples, peeled & diced
2 medium pears, peeled & diced
400g of strawberries, hulled and cut in half

Recipe 3:

Tea 
Green tea with zesty lemon

Fruit
2 medium green apples, peeled & diced
2 medium pears, peeled & diced
2 medium nectarines, peeled & diced
200g strawberries, hulled and cut in half

Topping

2/3 cup crème fraîche or mascarpone cheese
1 teaspoon vanilla extract

NB. If using Mascarpone cheese, use 2 teaspoons of vanilla extract and add 2 tablespoons of sifted icing sugar or powdered sweetener to the mix.

  1. Boil 500mL of water. Pour the water into a jug, and add 3 green tea bags of your choice to the water. Leave to infuse for 3-5 minutes and then discard the tea bags.
  2. Pour the green tea into a large saucepan and add the prepared fruit to the tea. Cover with a lid and turn heat to medium until the water boils. Remove the lid, and simmer fruit over a low heat until it is tender (about 15 minutes).
  3. To make the topping, combine the crème fraîche and vanilla extract in a small bowl and mix well to combine. If using the Mascarpone cheese, combine it with the vanilla extract and sifted icing sugar or sweetener in a small bowl until well mixed.
  4. Divide poached fruit among bowls, and top with crème fraîche or Mascarpone cheese.
