Potato Pan Pizza

This pizza is a tasty, quick and easy meal idea for brunch, lunch or dinner. Team it up with a fresh green salad and hey presto you have a delicious meal that’s high in fibre and also Gluten and Wheat free.

Base

  • 1 cup Healtheries Gluten Free Baking Mix
  • 100g cooked mashed potato
  • 50g butter
  • ½ teaspoon marjoram or preferred herb (dried)

Filling

  • 2 medium tomatoes
  • 1 or 2 rashers bacon (chopped)
  • 1 green pepper
  • 1 cup chopped mushrooms
  • ½ teaspoon marjoram
  • ½ teaspoon basil
  • 1 cup cooked cubed potato
  • 2 cups grated cheese

Method

  1. Preheat your oven to 200oC.
  2. In a food processor, mix the baking mix, mashed potato, butter and marjoram until they are all well combined. Once these ingredients have combined, press the mixture into greased loose-bottom cake tin.
  3. Chop the first four ingredients of filling (tomatoes, bacon, green pepper and mushroom).
  4. Mix the herbs, cubed potato and cheese in a bowl and then combine this with the chopped filling mixture (tomatoes, bacon, green pepper and mushroom). Press this firmly onto uncooked base. And add extra cheese if desired.
  5. Cook your pizza at 200ºC for about 25 - 30 minutes, until the base is brown and top is golden.
