Red Pepper & LSA Soup

This smooth and creamy soup combines red capsicum with paprika for a delicious tasting blend. Thickened with LSA Super Grains and buttermilk for extra nutrients and protein.

  • 2 medium red capsicums
  • 1 brown onion
  • 1 Tbsp canola oil
  • 2 tsp paprika
  • 1 tsp pepper
  • 1 tsp crushed garlic
  • 2 cups of vegetable stock
  • 1/2 cup Healtheries LSA Super Grains
  • 1 cup of buttermilk

Method

  1. Heat a non-stick fry pan over medium-high heat. Dice onion and capsicum.
  2. Add canola oil and diced onion to the pan, along with the garlic, paprika and pepper. Cook until onion is softened and flavours have infused.
  3. Add the diced capsicum to the pan and cook until softened.
  4. Add the vegetable stock to the pan and simmer for 5 minutes, then add the LSA Super Grains and simmer for a further 5 minutes until the mixture thickens.
  5. Take off the heat and allow to cool if time permits. Pour the soup into a food processor in batches and mix until smooth, transferring smooth mixture into a large pot.
  6. Once you have all the soup in a pot, warm the mixture through on a low-medium heat.
  7. Gradually add the buttermilk, stirring to combine, until you have a thick creamy soup.

Serving Suggestions

Sprinkle with ground chilli pepper, or a pinch of paprika. Serve with a slice of gluten free bread for dipping.
