Savoury Scones

There’s nothing better than the smell of freshly baked savoury scones wafting from the oven. This is an easy gluten free recipe perfect for a last minute lunch or afternoon tea.

  • 1 cup Healtheries Ground Cornmeal Flour
  • 1 ½ cups Healtheries Gluten Free Baking Mix
  • 1 tsp gluten free baking powder 
  • Pinch of salt
  • 50 g butter
  • ½ - ¾ cup lite sour cream or low fat plain yoghurt
  • ½ cup chopped feta cheese 
  • 2 tbsp chopped chives or two spring onions finely sliced
  • 2 tbsp finely chopped red capsicum
  • pinch of chilli powder or paprika

Method

  1. Preheat oven to 1800C. Lightly dust an oven tray with baking mix.
  2. Sift flour, baking powder, salt and chilli powder into a large bowl. Add chives and capsicum.
  3. Cut butter and feta cheese into flour until it resembles fine breadcrumbs.
  4. Add sour cream and mix quickly to a soft dough with a knife. Knead a few times then press gently into a large square.
  5. Slice into 6 scones and place on prepared oven tray. Bake for 20 minutes.

Serving Suggestions

Serve warm out of the oven for morning or afternoon tea or pack for a picnic!
