Spiced Biscuits

These biscuits are filled with the delectable taste and aroma of Christmas spices. Make a batch with the kids and put them out for Santa to enjoy or simply enjoy them as a festive treat over Christmas. They’re moist, chewy and also gluten-free to ensure no one misses out!

  • 1 ½ cups, Healtheries Gluten Free Baking Mix
  • ¼ teaspoon baking soda
  • 1/8 teaspoon of salt
  • ¼ teaspoon of ground cloves
  • ¼ teaspoon of ground ginger
  • ¼ teaspoon of all spice
  • ½ teaspoon of ground cinnamon
  • ¾ cup sugar
  • 56g of butter, at room temperature
  • 4 tablespoons of Healtheries Blackstrap Molasses 
  • 2 extra large eggs, at room temperature

Method

  1. Preheat oven to 180°C. Line two large baking trays with baking paper and set aside.
  2. In a large bowl, add the baking mix, baking soda, salt, spices and sugar and whisk to combine. Add the butter, molasses and eggs, mixing to combine after each addition. At this stage the dough should be thick but soft.
  3. With a small spoon and very wet hands, roll the dough in 24 small balls. Place each ball on the prepared baking trays. Make sure you leave plenty of room between the balls for the biscuits to spread during baking. Using wet fingers, flatten the top of the balls slightly. 
  4. Place the prepared trays into the centre of the oven and bake for 8-10 minutes until golden brown around the edges and mostly firm on top to the touch. Rotate the baking trays once during baking.
  5. Allow the biscuits to cool completely on the trays before serving.
