Whip up a batch of these tasty gluten-free cookies this Easter weekend and let the deliciously warming smells of spices and chocolate fill your kitchen. We’ve used our Healtheries 99% Sugar Free Dark Chocolate Baking Bits to create these lower* sugar Easter treats. Enjoy!*When compared to regular chocolate chips
100g butter, softened
1/2 cup brown sugar
1 tsp vanilla essence
1 egg, medium sized
½ cup Healtheries Rice Flour
½ cup ground almonds
2 Tbsp almonds, roughly chopped
1 tsp cinnamon
1 tsp mixed spice
1/4 tsp nutmeg
1/4 tsp cloves
¼ cup Healtheries 99% Sugar Free Dark Choc Baking Bits
1. Preheat the oven to 180ºC and line two baking trays with baking paper.
2. In a medium sized bowl beat the butter and brown sugar until light and fluffy. Add the vanilla and egg and beat to mix.
3. Add the ground almond, chopped almonds, Healtheries Rice Flour, spices and Healtheries 99% Sugar Free Dark Choc Baking Bits. Mix with a spoon to combine.
4. Roll mixture into teaspoon sized balls and bake on oven trays for 10- 12 minutes. Leave on the trays for 1–2 minutes then place on a wire rack to cool.
