Spiral Salad with Tuna & Green Beans

For a gluten-free and healthy meal, this pasta recipe is simply delicious, full of colour and texture making it perfect for a quick dinner or lunch.

  • 250g pkt Healtheries Simple Spirals
  • 100g green beans, trimmed and cut in thirds
  • 1 small red onion, finely sliced
  • 2 x 185g can tuna, drained
  • 1 red capsicum, diced
  • 1/4 cup black olives
  • 1/4 cup extra virgin olive oil
  • 1/4 cup lemon juice
  • 1 garlic clove, crushed
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • 2 tablespoons continental parsley leaves

Method

  1. Cook pasta in plenty of boiling, lightly salted water for 6-8 minutes until al dente, adding beans in the last minute of cooking.
  2. Drain pasta well. Place in a large bowl.
  3. Add onion, tuna, capsicum and olives.
  4. Combine oil, juice, garlic, mustard and honey. Season with salt and black pepper. Stir dressing through salad.
  5. Sprinkle with Parsley leaves and serve hot or cold.
