Sundried Tomato, Olive & Pesto Pasta

This delicious healthy pasta dish is packed full of flavour and can be whipped up within 20 minutes!

  • 1 packet Healtheries Simple Spirals
  • 1 large red onion, chopped into large wedges
  • 50g olives, sliced
  • 100g basil pesto
  • 50g sundried tomatoes
  • 50g baby spinach
  • 30g parmesan cheese
  • 1 Tbsp fresh parsley, chopped

Method

  1. Preheat oven at 200°C. Roast red onion for 15 minutes or until soft.
  2. Cook pasta according to instructions on back of pack. Drain and return to pot.
  3. Add all other ingredients to the pasta and combine well.
  4. Season to taste and serve with parmesan and fresh parsley.

Serving Suggestions

Serve as a meal on its on or as an accompaniment to meat or seafood.
