100g unsalted butter, room temperature
1/4 cup sugar
1 egg, medium size
1/2 tsp vanilla essence
1 cup flour
1/2 cup Healtheries Ground LSA- Super Fruits
2 tsp Healtheries Super Reds Smoothie Booster
1/2 tsp baking powder
2 Tbsp Healtheries Dietex Strawberry Preserve or 4 fresh strawberries chopped
1. Preheat the oven to 180ºc. Line an oven tray with baking paper.
2. Cream the butter and sugar with an electric mixer or food processor until fluffy. Add the egg and vanilla and mix to combine. Add the flour, LSA, smoothie booster and baking powder, mixing briefly to combine.
3. Roll the dough into 16 small walnut- sized balls. Arrange the cookies on the tray with 2cm space between each and make an indent in the middle of each ball with your thumb. Use a small spoon to fill the holes with 1/2 tsp of strawberry preserve or fresh strawberry pieces.
4. Bake for 12- 15 minutes until lightly golden. Cool on a rack and store in a sealed container. Consume within three days.
