1 cup frozen corn
50g feta, crumbled
1 Tbsp parsley, chopped
2 eggs, medium size
1/4 cup Healtheries Rice Flour
Salt & pepper to season
Small amount of oil for cooking
1. Combine all the ingredients in a mixing bowl. Check the consistency, the batter should be quite thick so that it will hold it's shape while cooking. Add extra flour if needed.
2. Heat a frying pan over a moderate heat, add a little oil and drop tablespoon amounts of batter into the pan. Cook until golden around the edges then flip and cook for a further minute. Cool on a rack then keep in a sealed container in the fridge.
3. Serve with zesty yoghurt dip- combine 4 Tbsp natural yoghurt with 1 tsp lemon zest and 1/2 tsp grainy mustard.
