Berry Light Breakfast Bars

This gluten free recipe for delicious breakfast bars is quick and easy. These bars are perfect for breakfast on the run, lunchboxes or an afternoon snack.

  • 2 cups Healtheries Simple Berry Light Muesli
  • 1 cup Healtheries Gluten Free Baking Mix
  • 1 teaspoon baking powder
  • 2 eggs
  • 1/2 cup liquid honey
  • 1/2 cup canola or rice bran oil
  • 1/2 teaspoon vanilla essence


Drizzle strawberry icing over the top of the bars.


  1. Preheat the oven to 180oC. Line a 20 cm square baking tin with baking paper, and spray with a little oil.
  2. Place the eggs, liquid honey, oil and vanilla essence into a large bowl and beat to combine.
  3. Sift the baking mix and baking powder, add to the wet ingredients and mix to combine. Add the Berry Light cereal to the bowl and mix lightly.
  4. Pour the mixture into the prepared baking tin. Place in the preheated oven, and cook for about 15-20 minutes or until a skewer inserted into the middle comes out clean.
  5. Cool in the tin, and cut into bars with a sharp knife.

Serving Suggestions

Serve these bars for a snack or pop into the lunchbox.
