Chewy Nut Bars

Full of the goodness of grains, nuts and dried fruit, this healthy recipe for chewy nut bars is quick and easy to bake.  Perfect for low fat snacks or healthy party food.

  • 1 cup rolled oats or 1 cup Healtheries Deluxe Bircher Muesli
  • ½ cup Healtheries Wheatgerm
  • ½ cup Wholegrain Rice Flakes
  • Pinch iodised salt
  • ½ cup raisins
  • ½ cup chopped nuts (unsalted/unroasted varieties)
  • 2 tablespoons reduced fat spread (or butter)
  • ¼ cup peanut butter (salt reduced variety)
  • ¼ cup brown sugar
  • ½ cup honey
  • 1 teaspoon vanilla essence

  1. Place dry ingredients into a bowl.
  2. Place butter (or reduced fat spread), peanut butter, sugar and honey into a saucepan and bring to the boil. Boil for 2 minutes, stirring constantly.
  3. Add the vanilla essence. Pour this liquid into the dry ingredients and mix well.
  4. Press into a 22cm square lined tin. Chill for ½ hour before cutting into squares.
