Chia Vege Loaf

For an easy vegetarian option the whole family will enjoy, look no further than this delicious nutrient packed loaf

  • 2 cups cooked brown rice
  • 1 grated carrot
  • 1 red capsicum, diced
  • 1 cup of chopped mushrooms
  • 2 cloves garlic, crushed
  • 1 cup mashed tofu
  • 1/4 cup Healtheries Ground Chia Seeds
  • 4 tsp mixed herbs
  • 1/2 tsp salt
  • 4 eggs
  • 3 Tbsp canola oil


4 loaves


  1. Pre-heat oven to 180 degrees C.
  2. Combine rice, carrot, capsicum, mushrooms, garlic, tofu and chia seeds in a large bowl.
  3. Add in mixed herbs, salt, beaten eggs and oil.
  4. Fourth Step
  5. Mix all ingredients together and pour into a large greased loaf tin.
  6. Fifth Step
  7. Bake at 180 degrees for 40-50 minutes.

Serving Suggestions

Season with cracked pepper to taste and serve with a green salad or steamed vegetables, ideal for lunch or dinner.
