Get into the festive spirit with a batch of these tasty nutrient-packed treats. Keep them in the fridge as a convenient and guilt free 'something to nibble on'. These will also make a great gift!

1. Soak the dates and cranberries in recently boiled water for 10 minutes and then squeeze out thoroughly reserving the soaking water.
2. Place the squeezed fruit and all of the remaining ingredients into a food processor and blend until well combined and the mixture stays together when rolled between your fingers.
3. Using a tablespoon, roll into balls and then coat in either coconut, freeze-dried raspberries or cocoa.
4. Store in an air-tight container in the fridge for up to one week.
Approximately 20 balls.
