Gluten Free Pancakes

Looking for a simple but delicious gluten-free breakfast treat? Easy enough for the kids to prepare, this healthy pancake recipe ticks all the boxes!

  • 1 cup Healtheries Rice Flour 
  • 1 cup Healtheries Ground Cornmeal Flour
  • 1/2 Tbsp. sugar
  • 2 tsp. baking powder
  • 1/2 tsp. baking soda 
  • 1 cup reduced fat plain unsweetened yoghurt
  • 4 Tbsp. lite olive oil spread, melted
  • 2 eggs, lightly beaten

  1. Combine the rice flour, cornmeal flour, sugar, baking powder and baking soda in a bowl.
  2. Mix in the yoghurt, margarine and egg and stir, reaching thick batter
  3. Heat a non-stick pan over a medium heat
  4. Add 2 tablespoons of batter per pancake to the pan and cook each side 

Serving Suggestions

Serve with your favourite toppings such as orange or lemon zest, low fat yoghurt or fresh fruit.
