Lemon & Chia Seed Delights

These muffins are refreshing and delicious, perfect topped with just a sprinkle of icing sugar and lemon zest.

  • 2 Tbsp Healtheries Black Chia Seeds
  • 1/2 cup sugar
  • 1/2 cup canola oil
  • 5 lemons
  • 1 tsp vanilla essence
  • 2 cups flour or Healtheries Baking Mix
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 cup almond milk

*For a gluten free muffin, ensure all ingredients are gluten free

  1. Preheat oven to 1800C. Line 12 muffin tins.
  2. Soak chia seeds in 6 Tbsp water.
  3. Combine flour, baking powder and baking soda in a bowl.
  4. In a separate bowl, mix sugar, oil, zest of 4 lemons, juice of 2 lemons, vanilla essence, almond milk and soaked chia seeds.
  5. Add dry ingredients to wet ingredients and stir until just combined.
  6. Transfer mixture evenly into the muffin tins and bake for 30 minutes.
  7. Dust with icing sugar and zest of the remaining lemon.
