1/4 telegraph cucumber
80g feta, crumbled
3 Tbsp plain, natural yoghurt
1 Tbsp Healtheries Flaxseed Oil
1 tsp Healtheries White Chia Seeds
1 tsp chopped fresh mint
Pinch of pepper
1. Cut the cucumber lengthways and use a teaspoon to scoop out the seeds. Grate the flesh and squeeze well in a sieve to remove excess liquid.
2. Combine the feta, yoghurt, oil, chia seeds and mint in a bowl and use a fork to mix into a smooth dip. Add the grated cucumber and combine. Season with pepper to taste.
3. Store in a sealed container in the fridge. Consume within 3 days.
4. Serve with Healtheries KidsCare Rice Wheels or Potato Stix.
