Pasta Salad with Salmon and Asparagus

This lovely pasta salad is great as a side dish or as a fresh quick meal on its own. If you’re feeling inspired replace the salmon with Tuna and the Asparagus with Green Beans.

  • 250g Healtheries Simple Spirals
  • 100g Asparagus
  • 1 finely sliced red onion
  • 185g can salmon (drained and flaked)
  • 1 red or yellow pepper (cut into chunks)
  • 12 halved cherry tomatoes
  • ¼ cup black olives (optional)
  • 1 Tbsp Italian parsley leaves


  • ¼ cup olive oil
  • ¼ cup lemon juice
  • 1 crushed garlic clove
  • 1 tsp Dijon Mustard
  • 1 tsp Honey
  • Salt and Pepper (to taste)


  1. Cook pasta following the directions on the back of the pack. While pasta is cooking prepare the remaining ingredients.
  2. Blanch asparagus in boiling water for 2 mins. Drain then plunge into cold water so they retain their colour and don’t overcook.
  3. Place dressing ingredients into a separate bowl and whisk to combine.
  4. Place pasta, beans, red onion, tuna, red and yellow pepper, tomatoes and olives (if used), into a salad bowl, add dressing and toss gently.
  5. Scatter the Italian parsley leaves on top, and then serve immediately.

Serving Suggestions

Serve with a fresh green salad.
