Sticky Date Muffins

This healthy recipe is perfect for quick and easy muffins that are loaded with nutritious and succulent dates.

  • 100g pitted dates
  • 1 cup orange juice
  • ¼ cup honey or golden syrup
  • 2 eggs
  • ½ cup macadamia nut oil*
  • 2 cups self-raising flour
  • 1 cup Healtheries Simple Hi-Fibre Muesli
  • ¼ cup oat bran
  • *Macadamia nut oil may be replaced with any other nut or vegetable oil.

  1. Preheat oven to 180°C. Lightly grease a 12 cup muffin tray.
  2. Place the dates and orange juice in a small saucepan. Cover and bring to the boil.
  3. Reduce the heat and simmer for 10 minutes. Transfer dates to a large bowl.
  4. Stir in the honey, eggs and oil, and mix until combined.
  5. Fold in the flour, muesli and oat bran.
  6. Spoon the mixture into a lightly greased muffin tray. Bake for 25 minutes. Allow muffins to cool. Store in an airtight container.
  7. Variation: You can use walnuts or other dried fruits in place of dates.
