Sticky Lemon Muffins

Who can resist this recipe for sticky lemon muffins that are not only quick and easy to make, but are gluten free as well!

  • 75g fat reduced spread or butter
  • ¾ cup castor sugar
  • 2 cups Healtheries Gluten Free Baking Mix
  • 1 cup fat reduced milk
  • 1 egg (lightly beaten)
  • Grated rind of one medium sized lemon
  • Paper cases or muffin pan
  • Topping: ¼ cup lemon juice and ¼ cup castor sugar




  1. Preheat oven to 180ºC. Grease muffin tin or line with 11 paper cases.
  2. In a bowl add all ingredients except the lemon rind. Mix gently.
  3. Mix in the grated lemon rind.
  4. Spoon the muffin mixture into paper cases or well greased muffin tin.
  5. Bake at 180 deg C (350 deg F) for 15 - 20 minutes.
  6. Mix together the topping and put a teaspoon of topping on each hot muffin.
