Swiss Fruit Loaf

A delectable fat-free fruit loaf with a delicious combination of fruit and hazelnuts. This gluten-free loaf keeps well and makes a great morning or afternoon-tea snack. Thanks to Carolie de Koster for sending in this wonderful recipe and image which originated in Switzerland!

  • 1 cup (250 ml) hazelnuts
  • 1½ cups (375 ml) soft dried apricots, cut up coarsely
  • 1½ cups (375 ml) dried figs, cut up coarsely
  • 2 cups (500 ml) sultanas
  • 1 cup (250 ml) sugar
  • 5 eggs
  • 2 Tbsp (15 ml) brandy
  • 1 cups (250 ml) Healtheries Gluten Free Baking Mix
  • 2/3 cup (175 ml) Healtheries Rice Flour
  • good pinch salt
  • 2/3 cups (175 ml) milk
  • 2 Tbsp (30 ml) extra brandy to sprinkle over loaf (See note below)
  • Aluminium foil to wrap (optional)
  • Icing sugar to dust before serving (optional)

NOTE: Extra brandy (see below) may be sprinkled over the loaf for flavour or to prolong storing time.


  1. Place the hazelnuts onto a baking tray and bake at 200ºC for 8-10 minutes or until toasted and the skins crack. Allow to cool and rub off the skins between the palms of the hands but leave the nuts whole.
  2. Pre-heat the oven to 180ºC. Line one medium loaf tin (26-28 cm) or two smaller tins (23 cm) with baking paper.
  3. Beat together thoroughly the sugar and eggs until light and fluffy. Add the nuts, fruit, brandy, Baking Mix, Rice Flour, salt and milk and stir well to combine. Spoon the soft batter into the prepared tin and smooth the top.
  4. Bake the loaf 45-50 minutes or until golden brown and thoroughly baked if tested with a metal skewer. Sprinkle with extra brandy if used, cool in the tin for about 10 minutes and turn out carefully. Remove paper and cool completely.
  5. Serve freshly baked or wrap in foil and store in a cool place for up to a month or refrigerate if made in hot weather. Dust with icing sugar before serving.

Serve with your favourite hot drink for a fabulous-fat free treat or with a little butter for slightly more indulgence!
